Today’s dish was nutritious🍅🫒🍆

Today’s main course was incredible! I got some really great nutrition in with this one! #baked #chicken with sliced #eggplants along with cut up #potatoes You can’t leave out some fresh #healthy #tomatoes The thing I love about cooking meals like this is all you mainly have to do is cut up the #veggies 🍆🥔🍅 Then design them in a pretty way in a nice #baking dish. But of course, use #salt and #pepper on the ingredients. I used #kosher salt and ground pepper. I also added non-stick cooking spray as well as a cup of water to the bottom so it wouldn’t stick. I #baked at 350 F for at least 35 minutes, more like 45, and even increased the temperature to 400 F for the last ten minutes or so. You be the judge of when it’s finished. Oh, and I drizzled #extravirginoliveoil over the #chicken and #potatoes and other #vegetables.
