Super Healthy Dinner!🥕🥖🐤

Today I’m in charge in the kitchen. So you know what that means, there will be a ‘meat’ of some sort with colorful veggies. Oh, and here’s a tip: use ketchup instead of any white creamy stuff (such as Ranch, etc.). Ketchup is so much lighter in calories. I’ll admit, I did accompany this healthy meal with a small coke (90 calories only). No matter how healthy I eat and no matter how much I strive to make more of my meals—a little side of coke each day is something I can’t give up! And I will admit, I do enjoy a little dessert often. I also added a slice of American cheese to that loaf of wheat bread, 80 calories. Cheese is actually healthy to snack on. All in all, I will “guesstimate” this meal is at about 490 calories, and that is not too bad at all with a healthy balanced breakfast. I’m working to maintain 1,440 calories or less per day. With a healthy meal like this I should be OK.👍 #mediterranean #paleo #keto #diet #health #foodie #healthyfood

Side note: proteins such as meat/poultry/fish help you feel fuller and eating earlier in the day curbs your appetite so you eat much less in the evening hours.😊 #intermittentfasting #16:8 #fastingforhealth #diet #weightloss

God Doesn’t Change Like We Do✨🕊️💕

God is not a fair-weather friend. He doesn’t act like Al Capone, either, and is not ready to use a heavy hand. God is all-loving. All kind. And loves you even when you mess up. He is cross-like love. By bearing our sins, he bore all evil and wrong that could be known to man. Oftentimes, we get ourselves in trouble and then turn around and blame it on Him. God is a personal one. He loves you and cares about your day-to-day life, your actions affect him more than you realize. He cares about your well-being too. Complete your work for the kingdom. Run the race. Win. It doesn’t mean you won’t mess up at times and disappoint him. But get back on track. Lay up for yourself treasures in heaven not on earth where thieves break in and steal. Where moth and rust destroy.

What We are Is Eternal (consciousness)🌟

Have you ever thought about what brings about ‘consciousness?’ I mean, what is the difference between you and a baseball bat? After all, you are both just a collection of particles. Of course the bat cannot think or behave like you! The bat could never be as conscious or aware as you are. Brian Greene, world famous physicist says, ‘we are an exquisite collection of particles.’ We have a high level of information integration going on ‘in our heads,’ Brian continues. He also does not believe in the idea of free will. He says we are governed by physical law and laws of the universe; however, as humans we have a variety of ways that we can ’respond’ to the world and outside environment. So then could we say that we are ’responsible’ for anything? Yes. If you played an integral part in a course of events, than you are also an integral part of the consequences that happen.’ It’s algorithmic. So, then, should we still be responsible for our actions and punished for our transgressions, so to speak? Brian says, yes. If our punishment would benefit society as a whole and stop us from doing it again. I’m going to add the link to this video, but first I will tell you how I see it: our God is a personal one. He was punished for our transgressions when he died on the cross. He was raised again by the Laws of Physics (our Holy Father created all of it!). I believe what Brian says, that so much is ruled by the Laws of the Universe, and of course, God made us to be more exquisite than a baseball bat. He loves us unconditionally—even when we mess up. And he is always waiting for us with open arms. We are here ‘from moment to moment,’ but what we are experiencing is eternal. There is no end.✨☦️⚛️

Happy Birthday to me…to be continued!🎂🎂🎂

It’s been a great week. It began with cooking/baking. Two of my favorite hobbies, of course. The French Onion Cheesy Chicken bake was delicious! I love how onions carmelize on their own due to the fact that they are naturally made of sugar! Yumm!

I also made it a point to wear a little make up each day. I am the typical “hair up in a clip or bun and go to work” type woman. So it was nice to take some photo shots and dress up!

Finally, I will add a picture of what I baked on my bday yesterday: it is a home made red velvet cake with strawberry short cake frosting (I added food coloring to give it the pretty pink tint!). Of course I bought tupperware to slice and distribute. I ❤️ to give away food!

My friend from out of state hosted a virtual birthday party for me yesterday, and I even got presents!🎁 It’s been a wonderful week! Today the celebration continues!🎉

God Is Always There♥️

These are some of the books in my book collection. There are books by Joyce Meyer, Rick Warren—The Purpose Driven Life, and there are several bibles. Now I even have my dad’s scripture collection in his native language (Aramaic).☦️ I have the mug I received after speaking at the Harvard Faculty Clubs ‘Business Expert Forum’ and also have a few Christmas designs. I was going through my bookcase earlier today and was feeling a little sad that the holidays are almost over.🎄Well, we are actually past New Year’s. However, a new year can bring with it many blessings. For example, my latest book — Not Without God: Hope In the Storm is now up for preorder sale and will be released on January 24! So I’m excited about that! I’m feeling healthier and have achieved some big health goals last year. I’ve grown this blog to almost 100k views, and that’s been a long-term goal. Of course, I’m working towards getting millions of viewers on here and even more subscribers. But besides all the good news, I guess I’m having a little bit of post holiday blues. However, I’m still looking forward to the many blessings a New Year can bring with it.🎉 I’m continuing to ask God to lead and guide me in the right direction. This is so true. God is perfect and so is his timing. Although things don’t always work out how we would’ve liked or expected, God is still in our corner—working out his perfect will. When you can find the blessings in hardship, you are on God’s path. There will be good and bad times, but he will never leave your side. Everything is in a kind of ‘cosmic order,’ but your decisions do make a difference. Decide to stick with God. Happy Thanksgiving!🍁🐓🙏🌱

I cooked and cleaned for four hours today and was mindful of what I made but tried to keep the spirit of Thanksgiving! Here are some of the highlights from start to finish:


Cornish hen (16 oz. total) 220 calories per 4 oz.

Voila!!!


I cooked green beans they are extremely healthy! Almost similar to drinking water! lol A whole cup will only add about 34 calories to you!🍃


Now potatoes can be less forgiving. They are a ‘starchy vegetable’ and a WHOLE HALF CUP will cost you 110 calories!🤣🤦‍♀️

I was going to add my healthy brown long rice, but honestly this was enough. And of course I have leftovers!!!

So I topped the meal off with a cup of hot tea ☕️ and tea can be very low calorie even with a tspn of sugar you’re running under 30 calories. I prefer tea over coffee especially in the evening it’s better for you!

Finally, I had to add in a dessert so I baked cookies.🍪🍪🍪


Each one of these peanut butter delights will run you about 100 calories. It was worth it. I had ONE and stored the others.

Well there you have it! My Thanksgiving was thought out and planned and portion-sized. I love stuffing and turkey but I’ve made turkey before, and today I wanted to try to make a Cornish hen for the first time. It was delicious!😋😄🐓

God Is Miraculous💕

It’s true. God is awesome and miracles happen all the time! Don’t ever underestimate God or his love for you!💞 The greatest physicists have even confirmed that in this world anything (good) can happen to you! We walk by faith and not by sight. Therefore we know that our experiences and interactions are a reflection of the faith we have in him!💖 Don’t think about how big your problems are; think about how big our God is. It is hard to imagine, but he loves each of us as if we are the only ones here.💕💞💖
