Kufta-creation!🥩🍳🥖

You can never have enough animal food on your plate! Take a look at my kufta-creation. Two pieces of Kuftas, less than 100 g in total, cooked with parsley flakes, and spiced in salt, pepper, a dash of cumin, allspice, chili pepper flakes, cardamom, cinnamon, cloves, and coriander!👩‍🍳

I also have two large sized eggs, scrambled, but spiced with only salt and pepper😊. On the side I have some delicious Asiago cheese (Santorini), flavored w/Rosemary and Olive Oil to go on a wheat bun, and a warm cup of coffee.☕️

Mediterranean chicken asparagus lemon delight!🍋🐤🫒

Lunch was fabulous. I had 3/4 of a medium chicken breast. A side of about 15 asparagus spears with half of a sliced lemon, salted, and a side of light Lays potato chips. Last but not least, I included 2 tablespoons of hummus with a Coke. This was yummy good.

I got in two vegetable servings, and two protein servings between the healthy hummus and the chicken. The meal was cooked in extra virgin olive oil, and first I baked the chicken at 420 F for about 25 minutes. I surrounded it with the sliced lemons on the oven tray and drizzled it with extra virgin olive oil. I sprinkled kosher salt and black ground pepper over the chicken also.

I steamed the asparagus and cooked the spears in extra virgin olive oil as well, of course. I also dashed the veggies with table salt, kosher salt, and black ground pepper. I added a few cubes of unsalted butter🧈 over the asparagus. It was so good.🫒🍋🌱🐤🧆🫒

Finally, I took the chicken out of the oven early and decided to finish cooking it in the pan with the asparagus. I also added the lemons.🍋 I wanted to combine all the ingredients together, and I really wanted the chicken to soak up the taste of the butter and asparagus, salt, and lemon combo.

Edits! you will have to adjust your heat from high to medium high from time to time. Take caution when frying anything with (olive oil) I use a lid when cooking the chicken to prevent all the bubbly oil from making a mess! Oh, and technically chicken is cooked at 150-155!

Today’s lunch! Part 2🍅🌾🐥

Nowadays you would think I were a diabetic or living in an old folk home with the meals I’m preparing. I am not a diabetic, and I don’t live in a home/rehab facility. But here’s the thing: low salt, ‘brown’ rice (vs. white), a simple 4 oz. piece of shredded chicken and raw tomatoes are all healthy choices! As a matter of fact, we are all at risk for diabetes and heart disease (they are the number one diseases in this country); thus, we should eat as if we have them already. That means take out the McDonald’s, pizza orders, restaurant food cooked heavily in canola, and all the ‘junk’ food and greasy stuff. If you eat these items learn to eat them very minimally! I use the My Fitness pal app to monitor calories, steps, etc. Did you know the food you consume can actually make you slimmer? This simple lunch I had made me feel full. I often use olive oil, some salt, or as you can see-ketchup as a condiment. Black pepper is great. I’m not a huge garlic fan unless it’s minced and worked into gourmet dishes.
