Today I made homemade potato wedges as you can see. Cooked in nothing other than extra-virgin olive oil, of course. Also spiced with paprika, thyme leaves, salt, pepper, and some kosher salt. Yum! These wedges were so good as a side to my eggs and fresh turkey slices. Of course only on wheat bread with a warm cup of coffee on the side.
Yes, potatoes are not the best for you, especially not on the glycemic index – however, they are delicious and you have to cheat once in a while. Hopefully the protein in the eggs and turkey will offset some of that.😊
